Banana Chocolate Chip Coffee Cake

Ingredients

  • For Cake Batter
  • 3 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup walnuts chopped
  • 1 cup bittersweet chocolate chips
  • 4 bananas ripened
  • 1 1/2 cups sour cream
  • 2 eggs
  • 3/4 cup applesauce
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • For Filling
  • 1/2 cup brown sugar packed
  • 2 tsp cinnamon ground
  • 1/2 cup walnuts chopped
  • For Glaze
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Directions

    1. Preheat your oven to 350 F degrees. Spray a 10 inch angel food cake pan with cooking spray. Set aside.
    2. In a large bowl combine the flour, baking soda, baking powder, salt, walnuts and salt.
    3. In another medium bowl mash the bananas using a fork or a potato masher. Add the sour cream, eggs, applesauce, vanilla extract and granulated sugar and whisk everything together.
    4. Pour the wet ingredients into the bowl with the flour and using a spatula mix everything together.
    5. In another small bowl combine all the filling ingredients together.
    6. Spread 1/3 of the batter into the prepared cake pan. Sprinkle 1/3 of the filling over the batter and repeat 2 more times to finish the rest of the batter and filling.
    7. Place the cake pan in the oven and bake for about an hour or until a toothpick inserted in the center comes out clean. Cool the cake in the pan for 10 minutes then remove and continue cooling on a wire rack.
    8. Meanwhile, make the glaze by whisking all the ingredients together in a small bowl, adding more milk if needed. The glaze should be smooth and thin enough to drizzle.
    9. Drizzle the glaze over the cake, cut into slices and serve.
