Chicken Parm Meatball Subs

Ingredients

  • 1 lb. ground chicken
  • 1 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper, plus more for garnish
  • 1 tsp. garlic powder
  • 1/2 tsp. Italian seasoning
  • 1/4 c. freshly grated Parmesan
  • 1/4 c. panko bread crumbs
  • 1 egg yolk
  • 4 white hoagie rolls, split horizontally
  • 1 c. marinara
  • 8 slices provolone
  • Thinly sliced fresh basil, for garnish
  • Directions

    1. Preheat oven to 400ยบ. Grease a large casserole dish and set aside.
    2. In a large bowl, combine ground chicken, salt, pepper, garlic powder, Italian seasoning, Parmesan, panko, and egg yolk. Mix until all ingredients are incorporated. Shape into 32 balls and place in a single layer in prepared baking dish. Bake until browned and cooked through, 22 to 25 minutes.
    3. Assemble sandwiches: To each roll, add 8 meatballs, 1/4 cup marinara, and 2 slices provolone. Bake until cheese is melted, 5 minutes. Top with pepper and garnish with basil. Serve immediately.
