Pecan Pie Bars

Ingredients

For the cake

  • 1 package yellow cake mix, divided
  • 1 stick butter, softened
  • 1 egg

For the topping

  • 3/4 c. yellow cake mix
  • 1/2 c. brown sugar
  • 1 1/2 c. dark corn syrup
  • 1 tsp. pure vanilla extract
  • 1 tsp. cinnamon
  • 3 large eggs
  • 1 c. pecans, chopped

Directions

  1. Preheat oven to 350°, then use a stick of butter to grease the bottom and sides of a 9″-x-13″ baking dish.
  2. Make the Cake Layer: Set aside 3/4 cup yellow cake mix for the filling, then pour the rest into a large mixing bowl. Add butter and egg, beating with an electric mixer until well combined. Press dough into the bottom of the baking dish, and bake for 17 to 20 minutes, or until the dough is lightly golden.
  3. Make the Topping: In a large bowl, combine remaining cake mix, sugar, corn syrup, vanilla, cinnamon, and eggs, and beat for about 1 to 2 minutes to fully combine. Pour mixture over the cake crust and sprinkle with pecans. Bake for 30 to 35 minutes, or until the filling has set (if you move the pan, the center shouldn’t jiggle).
  4. Let cool for about an hour, then serve.
